I know for example that one of the big complaints about arch when it was newer is that it didn't have any sort of package signing, it does now, but it took a long time of people complaining for it to actually happen. Pacman is much faster than apt, but I always worry that it's because pacman is just deleting the old package, and unzipping the archive, while debian packages are more transactional, and take a lot more (possibly unnecessary) steps to make sure that everything is being done properly. This will be an iterative process of running it again and again, adding more package name (s) to the command. You may (and probably will) have to list other tesseract-related packages on the same command line. There's a few big differences you'll get with the two.
